Cheesy Orzo with Sweet Potato and Broccoli Recipe

Ingredients:

Box Orzo
Head of Broccoli (chopped)
Sweet Potato (diced)
3 Cloves of Garlic
1/2 cup Parmesan
Salt
Pepper
Garlic Powder (optional)
Red Pepper Flakes (optional)
Small Onion Chopped
3 Tbsp EVOO
1/2 Lemon (juice)
Veggie/Chicken Stock (optional)

 

Boil a pot of water or stock. Toss in the orzo and sweet potatoes cook for about 15 min. Add the broccoli and cook for another 5 min or until everything is slightly tender then drain. In a separate pan heat 2 tbsp EVOO and add onion and garlic and saute until onion is translucent. Then add the cooked orzo, sweet potato and broccoli to the pan with the onion and garlic toss in the Parmesan cheese, salt, pepper, 1 tbsp of EVOO, lemon juice, and other (optional) spices. Mix well and serve.
